Pakora Waffles – fsk's healthy way

Pakora Waffles

Guys, a pakora that doesn't need to be fried exists. And it's called a pakora waffle.

For those that don’t know what a pakora is, it’s basically a chickpea fritter with vegetables in it and is a staple appetizer for South Asians, aka Indians and Pakistanis. Usually, it’s deep fried, like any good appetizer. And with the month of Ramadhan (fasting for Muslims all around the world), these will definitely be served. So how do you enjoy them without having them greased up in oil? You waffle them up!

Ingredients

Directions

  • 2 cup chickpea flour
  • 1 2/3 luke warm water
  • 1 bunch spinach chopped (fresh)
  • 1/2 purple onion, thinly sliced
  • 1 small potato, thinly sliced
  • 1 green chili (optional)
  •  1-1.5 tsp chili powder
  • 1/2 tsp turmeric
  •  2 tsp salt

  1. In a large bowl, add the chickpea flour, spices, and water. Mix well, till smooth.
  2. Next add spinach, purple onion, and potato and your chili (optional).
  3. Let the mixture sit for about 30 minutes.
  4. Next, make sure your waffle maker is hot and ready to go. Using spray oil so the pakora mix doesn’t stick, pour in some of the pakora mixture. Close the waffle maker and open when ready. Remove hot and crispy pakora from the waffle maker and top with chutney and imli (tamarind sauce). *NOTE: If your pakora waffles get soggy, throw them into the toaster oven to crisp them up again!
