Whole Wheat Banana Nut Bread

I had some SUPER ripe bananas and was craving for something sweet, doughy, and nutty (#preggolife). Whipped up a loaf of this goodness, and let me tell you, it hit the spot!

INGREDIENTS:

4 ripe bananas 

1 cup whole wheat flour 

1/3 cup All-purpose flour

1 tsp. cinnamon

1/2 tbsp. baking powder 

1/4 cup coconut sugar

1 egg

1/4 cup honey 

1/3 cup almond milk 

1/2 cup coconut oil, melted (additional for parchment paper)

1/2 cup walnuts

DIRECTIONS:

  1. Preheat oven to 375 degrees. In a large mixing bowl, mash bananas and add coconut sugar, maple syrup, cinnamon, and baking powder — mix well. 
  2. Next, add almond milk and coconut oil and mix well. 
  3. Add the egg and flour and stir till mix is consistent. TIP: sift flour into mixture 
  4. Lastly, add walnuts.
  5. In a loaf pan, add parchment paper (spread with coconut oil) and pour mix in.
  6. Bake at 350 degrees for 45-60 minutes. Allow to cool and enjoy!

TIP: The side of my banana bread stuck to the parchment paper, so to avoid that, take a flat metal spatula, and do your best to separate the bread from the parchment paper when it comes out of the oven. You can use a few dribbles of water to help you with this.
